Jam Jams

One my mom used to make, I haven't made it very often. I also haven't tried it in a gluten-free form.

250    mL   shortening, butter or margerine 
250    mL   brown sugar
90     mL   corn syrup
2           eggs
10     mL   baking soda
625    mL   flour

  make the dough (by mixing everything together -- duh)
  roll it out quite thin on a floured surface

  cut circles (I use an inverted drinking glass)

  bake the circles at 175 C for 10-12 minutes.

  when the cookies have cooled, sandwich two together with 
  your favourite jam in between.

  icing works inside as well.
