Lazy Daisy Oatmeal Cake

Why lazy daisy? I don't know. We got the recipe from an elementary school cookbook.

1 1/4    cup   boiling water
1        cup   oatmeal
1/2      cup   butter 
1        cup   white sugar
1        cup   brown sugar
1        tsp   vanilla
2              eggs
1 1/2    cup   GF flour mix (I use Robin Hood $$)
1        tsp   baking soda
3/4      tsp   cinnamon
1/4      tsp   nutmeg

1.   Mix the oatmeal with the boiling water and let 
     it sit for 20 minutes.
2.   Beat together butter, eggs, sugar and vanilla.
3.   Add the dry ingredients and spices and the oatmeal.
4.   Bake 30-40 minutes in 175 C oven.
5.   Prepare topping if desired.

Topping

1        cup   brown sugar 
6        tbsp  butter 
1/4      cup   cream       
1        cup   coconut, shredded
1/2      cup   chopped nuts (optional)

1.   Combine these ingredients in a small saucepan, then 
     spread on the cake and broil until the topping is 
     bubbly and lightly browned.
